Simple and easy! Serves 2
Ingredients:
4 eggs
2 slises of bacon
1 cup of feta cheese
12 cherry tomatoes cut in half
1/2 cup of Parmesan
15 asparagus
Directions:
Start with the grilled asparagus. Wash them, add them to a griddle pan and shred some parmesan on top of them. Bake them in the over for about 10-13 minutes until they are soft but crisp on the outside (at around 180 C)
Scrambled eggs: in a medium bowl whisk together the eggs. Spray a medium skillet with just a drizzle of oil and set to medium heat. Add the bacon to the skillet and let "burn" for a couple of minutes. Then add most of the cherry tomatoes (keep some as a side to serve) and the feta cheese. In low heat let the rest for a while until all the ingredients have blended together. Add the eggs and keep stirring them until they are cooked. Serve immediately!
